Quinoa Black Bean Salad
This salad is super easy to make and its tasty and healthy. The core ingredient of this salad is quinoa, which is a complete plant based protein. Quinoa has the texture of a grain but is actually a seed. It is a good source of protein and complex carb for people who are following vegan diet and also who are gluten-intolerant.
⅓ Cup Uncooked quinoa, well rinsed
¼ Teaspoon Salt
⅔ Cup Water
¼ Cup Boiled black beans
2 Tablespoons Boiled corn
¼ Cup Chopped tomato and carrot
1 Teaspoon Lime juice
1 Tablespoon Chopped cilantro/coriander
2 Teaspoons Olive oil
STEP 1 Put the rinsed quinoa, salt and water into a pot and bring it to a boil. Cover and simmer gently until the quinoa absorbs all the water, about 15-20 minutes. Remove from heat and let sit for 5 minutes. Place into a large bowl and fluff up with a fork to help it cool more quickly.
STEP 2 When the quinoa has cooled, mix black beans, corn, tomatoes, carrot, lime juice and oil.
STEP 3 Garnish with cilantro and enjoy!
